What do we need:
- 1 15 oz can pumpkin
- 3 very ripe bananas, mashed
- 1/4 cup canola oil
- 3/4 cup brown sugar
- 1 Tbsp vanilla extract
- 2 cups whole wheat pastry flour (I was low on whole wheat so I used 1 1/2 cups whole wheat and 1/2 cup spelt flour)
- 1 tsp baking soda
- 1 tsp baking powder
- pinch of salt
- 1 tsp pumpkin pie spice
Steps:
- Mix flour, baking soda, baking powder, salt and pumpkin pie spice. Set aside.
- Mix together pumpkin, brown sugar, oil and vanilla until smooth.
- Gradually add the dry ingredients to the wet and mix just until all dry ingredients are incorporated. Do not over mix.
- Fold in the bananas.
- Spread mixture in loaf pan that has been sprayed with cooking spray.
- Bake in 325F oven for about an hour, or until a toothpick inserted in the center comes out clean.
- Let cool, slice and enjoy!
