Vegan Pumpkin Banana Bread

What do we need:

  • 1 15 oz can pumpkin
  • 3 very ripe bananas, mashed
  • 1/4 cup canola oil
  • 3/4 cup brown sugar
  • 1 Tbsp vanilla extract
  • 2 cups whole wheat pastry flour (I was low on whole wheat so I used 1 1/2 cups whole wheat and 1/2 cup spelt flour)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp pumpkin pie spice

Steps:

  • Mix flour, baking soda, baking powder, salt and pumpkin pie spice. Set aside.
  • Mix together pumpkin, brown sugar, oil and vanilla until smooth.
  • Gradually add the dry ingredients to the wet and mix just until all dry ingredients are incorporated. Do not over mix.
  • Fold in the bananas.
  • Spread mixture in loaf pan that has been sprayed with cooking spray.
  • Bake in 325F oven for about an hour, or until a toothpick inserted in the center comes out clean.
  • Let cool, slice and enjoy!
