Roasted Butternut Squash
- 2 Tbsp coconut oil or butter
- 2 med or 1 lg butternut squash
- 1 tbsp dark brown sugar
- 1 tsp salt
- Peel squash and dice into one inch cubes. Place on a baking sheet and coat with melted coconut oil or butter.
- Top with one tbsp dark brown sugar, sprinkle with salt and toss to coat. Bake at 400 degrees for 30 minutes turning once.
