Roasted Butternut Squash

Ingredients:

  • 2 Tbsp coconut oil or butter
  • 2 med or 1 lg butternut squash
  • 1 tbsp dark brown sugar
  • 1 tsp salt

 

Directions:

  1. Peel squash and dice into one inch cubes. Place on a baking sheet and coat with melted coconut oil or butter.
  2. Top with one tbsp dark brown sugar, sprinkle with salt and toss to coat. Bake at 400 degrees for 30 minutes turning once.
